1 pound breakfast sausage, crumbled

1 medium onion, chopped

1 bell pepper, diced (any color)

6 large eggs

2 cups milk

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

6 cups cubed day-old bread

2 cups shredded cheddar cheese

1 cup diced tomatoes (fresh or canned, drained)

1/4 cup chopped fresh parsley for garnish

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

    In a large skillet over medium heat, cook the crumbled sausage until browned and fully cooked, breaking it up into small pieces as it cooks, about 8-10 minutes. Drain excess fat if needed.

      Add the chopped onion and diced bell pepper to the skillet with the cooked sausage. Sauté for another 5 minutes until the vegetables are softened.

        In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.

          Layer half of the cubed bread evenly in the greased baking dish. Top with the sausage mixture, followed by half of the shredded cheese and diced tomatoes.

            Pour half of the egg mixture over the layered bread and sausage. Repeat the layers with the remaining bread, sausage mixture, cheese, tomatoes, and finish with the rest of the egg mixture poured over the top, ensuring the bread is fully moistened.

              Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

                Remove the foil and bake for an additional 15-20 minutes, or until the casserole is set in the middle and the top is golden brown and bubbly.

                  Once out of the oven, let the casserole cool for a few minutes. Garnish with fresh chopped parsley before serving.
