12 Medjool dates, pitted

1 cup natural peanut butter (or almond butter)

1 cup raw almonds, roughly chopped

1/2 cup dark chocolate chips (dairy-free if desired)

2 tablespoons coconut oil

Sea salt, to taste

1 teaspoon vanilla extract (optional)

Instructions
 

Start by preparing the dates: Soak the pitted Medjool dates in warm water for about 15-20 minutes to soften them if they're not already soft. Drain and pat dry.

    In a mixing bowl, take about half of the softened dates (6 dates) and mash them together with the peanut butter until well combined. This will be your caramel-like filling. If using, add the vanilla extract for extra flavor.

      In a separate bowl, fold in the chopped almonds into the peanut butter mixture. You should have a thick, chunky mixture that resembles a caramel texture.

        Line a small baking dish (about 8x8 inches) with parchment paper. Press the date-peanut butter mixture evenly into the bottom of the dish, spreading it out smoothly.

          In a small saucepan, melt the dark chocolate chips and coconut oil together over low heat, stirring constantly until completely smooth.

            Pour the melted chocolate over the layer of date-peanut butter mixture, smoothing it out with a spatula for an even coating.

              Sprinkle a pinch of sea salt over the melted chocolate for added flavor.

                Place the dish into the fridge for about 30 minutes to allow it to set.

                  Once set, remove from the dish using the edges of the parchment paper. Cut into bite-sized squares or bars.
