1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsweetened applesauce

1/3 cup maple syrup or honey

1/4 cup Greek yogurt (or a non-dairy yogurt)

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (preferably 70% cocoa or higher)

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or spray it lightly with non-stick cooking spray.

    In a medium bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, and salt until well combined.

      In a separate large bowl, mix the applesauce, maple syrup (or honey), Greek yogurt, and vanilla extract until smooth.

        Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing to keep muffins tender.

          Fold in the dark chocolate chips and chopped walnuts (if using) until evenly distributed throughout the batter.

            Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

              Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

                Remove from the oven and let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
