4 medium-sized russet potatoes

1/2 cup unsalted butter, melted

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

4 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    Wash and scrub the potatoes thoroughly to remove any dirt. Pat dry with paper towels.

      Make a series of evenly spaced cuts along each potato, about 1/8 inch apart, being careful not to cut all the way through (leave about 1/4 inch at the bottom of each potato).

        In a small bowl, combine the melted butter, olive oil, garlic powder, dried thyme, paprika, salt, and black pepper.

          Place the potatoes on a baking sheet lined with parchment paper. Brush the butter mixture generously on each potato, ensuring it seeps into the cuts. Reserve some of the mixture for later.

            Roast the potatoes in the preheated oven for 45-50 minutes, or until golden brown and tender, basting with the reserved butter mixture halfway through cooking.

              After your potatoes are cooked, remove them from the oven and sprinkle the shredded cheddar cheese on top of each potato. Return to the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.

                Once done, remove from the oven and let cool for a few minutes. Drizzle sour cream over the tops and sprinkle with chopped green onions and parsley for garnish.
