2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

4 large carrots, sliced

3 large potatoes, diced

4 cups beef broth

1 can (14.9 oz) Guinness beer (or similar stout)

2 tablespoons tomato paste

2 teaspoons dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper to taste

1 cup all-purpose flour (for dumplings)

1/2 cup shredded sharp cheddar cheese

1/4 cup fresh parsley, chopped

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 cup milk

1/4 cup unsalted butter, melted

Instructions
 

Sear the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes in batches, searing them on all sides until browned. Remove the beef and set it aside.

    Sauté the Aromatics: In the same pot, add the diced onion and sauté for about 5 minutes until softened. Add garlic and sauté for another minute until fragrant.

      Add Vegetables: Stir in the sliced carrots and diced potatoes, cooking for an additional 5 minutes.

        Combine Ingredients: Return the browned beef to the pot. Add the beef broth, Guinness beer, tomato paste, thyme, rosemary, bay leaves, salt, and pepper. Bring to a boil, then reduce the heat to low and let it simmer for about 1.5 to 2 hours, until the beef is tender.

          Make the Dumplings: In a mixing bowl, combine flour, baking powder, baking soda, salt, filled in the right amount of cheese, and parsley. In another bowl, mix the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.

            Add Dumplings to the Stew: Once the stew is ready, gently drop spoonfuls of the dumpling mixture on top of the simmering stew. Cover the pot with a lid and cook for an additional 15-20 minutes, until the dumplings are fluffy and cooked through.

              Finish and Serve: Remove bay leaves, adjust seasoning if needed, and serve hot.
