2 cups mixed mushrooms (cremini, shiitake, and button), sliced

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

4 slices of whole-grain bread

1 cup shredded mozzarella cheese

1/2 cup crumbled goat cheese

2 tablespoons fresh basil, chopped (or 1 teaspoon dried basil)

Butter for spreading

Sauté the Mushrooms: In a pan over medium heat, add the olive oil. Once hot, add the sliced mushrooms. Season with garlic powder, salt, and pepper. Sauté for about 5-7 minutes until mushrooms are tender and lightly browned. Remove from heat and let cool slightly.

    Prepare the Bread: Butter one side of each slice of whole-grain bread. This will be the outer side that gets grilled.

      Assemble the Sandwich: On the unbuttered side of two slices of bread, layer half of the shredded mozzarella cheese, the sautéed mushrooms, crumbled goat cheese, and chopped basil. Top with the remaining mozzarella cheese. Place the unbuttered sides of the other two slices on top to form two sandwiches.

        Grill the Sandwiches: Heat a non-stick skillet or griddle over medium-low heat. Once hot, place the sandwiches, buttered side down. Grill for about 4-5 minutes until golden brown. Carefully flip the sandwiches and grill the other side until the cheese is melted and the bread is crispy and golden, about another 4-5 minutes.

          Slice and Serve: Remove the sandwiches from the skillet and let them sit for a minute before slicing in half. This helps the cheese set slightly, preventing it from spilling out.
