Ingredients

1.5 pounds flank steak

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

1 large tomato, diced

1 red bell pepper, diced

1 jalapeño, finely chopped (seeded for less heat)

1/4 cup red onion, finely chopped

2 tablespoons fresh cilantro, chopped

1 tablespoon lime juice

1 teaspoon honey

Instructions

Marinate the Steak: In a small bowl, mix olive oil, smoked paprika, garlic powder, ground cumin, salt, and pepper. Rub this mixture onto both sides of the flank steak. Let it marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.

Prepare the Salsa: In a medium bowl, combine the diced tomato, red bell pepper, jalapeño, and red onion. Add the fresh cilantro, lime juice, and honey. Season with salt and pepper to taste. Mix well and set aside to let the flavors meld.

Preheat the Grill: Heat your grill to medium-high heat, around 450°F (232°C). If using a grill pan, preheat it over medium-high heat as well.

Grill the Steak: Once the grill is hot, place the flank steak on it. Grill for about 5-6 minutes on each side for medium-rare, or until it reaches your preferred doneness. Use a meat thermometer for best results (130°F (54°C) for medium-rare).

Rest the Steak: Remove the steak from the grill and let it rest on a cutting board for 5-10 minutes to allow the juices to redistribute.

Slice and Serve: Thinly slice the flank steak against the grain. Serve it on a platter topped with the zesty tomato and pepper salsa.

              - Prep Time: 30 minutes | Total Time: 1 hour | Servings: 4

Presentation Tips: Serve the sliced steak slightly overlapping on a large platter with the salsa generously spooned over the top. Garnish with additional cilantro sprigs for a burst of color and freshness. Pair with a side of grilled veggies or a fresh green salad for a complete meal!
