4 slices of sourdough bread

4 ounces Gouda cheese, sliced

1 cup mushrooms, sliced (e.g., shiitake or cremini)

1 medium onion, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons butter (for grilling)

Instructions
 

Prepare the Mushrooms and Onions:

    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced onions and sauté them until soft and caramelized, about 8-10 minutes. Stir in the sliced mushrooms, balsamic vinegar, thyme, salt, and pepper. Cook for an additional 5-7 minutes until the mushrooms are tender and golden. Remove from heat.

      Assemble the Sandwich:

        On two slices of sourdough bread, place a layer of Gouda cheese. Spoon the roasted mushrooms and onions over the cheese. Top with another slice of Gouda, then place the second slice of sourdough on top to create a sandwich.

          Grill the Sandwich:

            In a clean skillet over medium heat, melt 1 tablespoon of butter. Once melted and bubbly, place the sandwiches in the skillet. Grill until golden and crispy, about 3-4 minutes per side, adding additional butter as needed. Make sure the cheese is melting nicely as you cook.
