4 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 cup sharp cheddar cheese, grated

1/2 cup mozzarella cheese, grated

1/4 cup goat cheese, crumbled

1/2 ripe avocado, sliced

1/4 cup fresh basil leaves

1 tablespoon balsamic glaze (optional)

Salt and pepper to taste

Prepare the Bread: Spread a thin layer of softened butter on one side of each slice of sourdough bread. This will be the outer side that gets grilled.

    Assemble the Sandwich: Place two slices of bread, buttered side down, in a large skillet over medium heat.

      Layer the Cheeses: On each slice of bread in the skillet, start layering the cheeses: first, sprinkle the sharp cheddar evenly, followed by mozzarella, and then add dollops of goat cheese.

        Add Avocado and Basil: Once the cheese starts melting slightly, layer the avocado slices and fresh basil leaves on top. Sprinkle with a little salt and pepper.

          Top it Off: Finish by placing the remaining slices of sourdough on top of the filled slices, buttered side up.

            Grill the Sandwich: Cook for about 3-5 minutes, or until the bottom is golden brown. Carefully flip the sandwiches and cook the other side for another 3-5 minutes, or until both sides are crispy and the cheese is melted.
