4 slices of sourdough bread

4 tablespoons fresh basil pesto

8 slices of mozzarella cheese

4 slices of tomato

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1 tablespoon balsamic glaze for drizzling

Instructions
 

Preheat a skillet over medium heat.

    Spread 1 tablespoon of basil pesto on one side of each slice of sourdough bread.

      On the unspread side of two slices, layer 4 slices of mozzarella cheese, followed by a slice of tomato. Season the tomato with a pinch of salt and pepper.

        Top with another layer of 4 mozzarella slices and cover with the other slices of bread, pesto side facing outward.

          Drizzle olive oil into the preheated skillet. Carefully place the sandwiches into the skillet.

            Cook for about 4-5 minutes on one side until golden brown and crispy, then flip carefully.

              Cook the other side for another 4-5 minutes, pressing gently with a spatula to ensure an even grill.

                Remove the sandwiches from the skillet and let them cool for a minute before slicing in half.

                  If desired, drizzle balsamic glaze over the top for a refreshing touch.
