4 cups mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red bell pepper, thinly sliced

1/4 red onion, thinly sliced

1 avocado, sliced

1/3 cup feta cheese, crumbled

1/4 cup walnuts, roughly chopped

3 tablespoons extra virgin olive oil

2 tablespoons apple cider vinegar

1 teaspoon honey

Salt and pepper to taste

Instructions
 

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, and red onion.

    Gently toss the salad ingredients together to ensure an even mix.

      In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, and a pinch of salt and pepper until well combined for the dressing.

        Drizzle the dressing over the salad, and toss again gently to coat all the ingredients.

          Top the salad with sliced avocado, crumbled feta cheese, and walnuts for added crunch.
