2 cups green apples, peeled and chopped

1 cup granulated sugar

1 cup water

1 tablespoon lemon juice

1 teaspoon vanilla extract

A pinch of cinnamon (optional)

Instructions
 

Start by peeling and chopping the green apples into small pieces.

    In a medium saucepan, combine the chopped apples, water, and lemon juice. Bring the mixture to a gentle boil over medium heat.

      Once boiling, reduce the heat to low and let it simmer for about 10-15 minutes, or until the apples become soft and mushy.

        Using a strainer or fine mesh sieve, strain the mixture into a bowl, discarding the apple solids and retaining the liquid.

          Return the strained liquid back to the saucepan, add the granulated sugar, and stir over low heat until the sugar is completely dissolved.

            Continue to cook the syrup on low heat for an additional 10-15 minutes, until it thickens slightly. For additional flavor, stir in the vanilla extract and cinnamon (if using).

              Remove the saucepan from heat and let it cool slightly before transferring to a clean glass jar or bottle. Allow the syrup to cool completely before sealing.
