8 ounces mixed mushrooms (cremini, shiitake, and portobello), sliced

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons olive oil

1 tablespoon unsalted butter

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon crushed red pepper flakes (optional)

4 crusty slices of sourdough bread

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Sauté the Mushrooms: In a large skillet over medium heat, add olive oil and butter. Once melted, add the sliced mushrooms and sauté for about 5-7 minutes, stirring occasionally until they are golden brown and have released their moisture.

    Add Garlic and Thyme: Incorporate the minced garlic and thyme into the skillet. Cook for another 2-3 minutes until the garlic is fragrant but not browned. Season with salt, pepper, and crushed red pepper flakes if using. Remove from heat and set aside.

      Prepare the Bread: Preheat your oven to 400°F (200°C). Place the sourdough slices on a baking sheet lined with parchment paper. Lightly brush both sides with olive oil.

        Toast the Bread: Bake the bread in the preheated oven for about 5-7 minutes or until lightly toasted.

          Assemble the Toasts: Remove the bread from the oven. Top each slice with a portion of the mushroom mixture, spreading it evenly. Sprinkle a generous amount of mozzarella and a bit of Parmesan cheese over the mushrooms.

            Final Bake: Return the toasts to the oven and bake for an additional 8-10 minutes until the cheese is melted, bubbly, and slightly golden.
