24 Golden Oreo cookies, crushed

1/4 cup unsalted butter, melted

16 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, pureed (with a few chopped for topping)

2 large eggs

1 tablespoon lemon juice

1/4 cup all-purpose flour

Extra Golden Oreos and strawberries for garnish

Instructions
 

Preheat your oven to 325°F (160°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    In a medium bowl, combine the crushed Golden Oreo cookies and melted butter until well mixed. Press the mixture firmly into the bottom of the prepared baking dish to form a crust. Bake for 10 minutes, then remove and let cool.

      In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the powdered sugar, mixing until combined.

        Add the vanilla extract and pureed strawberries (saving some chopped strawberries for later) to the cream cheese mixture, and mix until fully incorporated.

          Beat in the eggs one at a time, ensuring they are fully mixed in before adding the next. Then add the lemon juice and flour, mixing until just combined.

            Pour the cheesecake batter over the cooled Golden Oreo crust in the baking dish, smoothing the top with a spatula.

              Bake in the preheated oven for 30-35 minutes, or until the center is set but still slightly jiggly. Allow to cool to room temperature, then refrigerate for at least 4 hours, or preferably overnight.

                Once cooled, lift the cheesecake bars out of the dish using the parchment paper overhang and cut into squares.

                  Top each bar with a dollop of whipped cream, chopped strawberries, and a half Golden Oreo for garnish.
