1 cup fresh cherries, pitted and halved

1 tablespoon fresh ginger, grated

2 tablespoons honey or agave syrup (adjust to taste)

1 tablespoon lemon juice

1 cup sparkling water

Ice cubes

Fresh mint leaves for garnish

Begin by preparing the cherries. In a mixing bowl, combine the pitted and halved cherries with the grated ginger. Use a fork to mash the mixture gently, allowing the flavors to meld.

    Add the honey (or agave syrup) and lemon juice to the cherry-ginger mixture. Stir well until everything is combined, and the honey is fully dissolved.

      Strain the cherry mixture through a fine sieve into a separate pitcher to remove any solid pieces. Use the back of a spoon to press down on the mixture to extract as much juice as possible.

        Fill glasses with ice cubes, pouring the strained cherry-ginger juice until the glasses are about two-thirds full.

          Top each glass with sparkling water for a refreshing fizz.
