4 medium-sized russet potatoes, peeled and grated

1 small onion, finely grated

2 large eggs

1/4 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder (optional)

Vegetable oil for frying

Sour cream or applesauce for serving

Instructions
 

Start by placing the grated potatoes in a clean kitchen towel. Squeeze out as much moisture as possible to ensure the pancakes are crispy.

    In a large mixing bowl, combine the squeezed potatoes and grated onion.

      Beat the eggs separately in a small bowl and then add them to the potato mixture.

        Add the flour, baking powder, salt, black pepper, and garlic powder (if using). Mix everything thoroughly until well combined.

          Heat about 1/4 inch of vegetable oil in a non-stick skillet over medium-high heat.

            Once the oil is hot, carefully drop spoonfuls of the potato mixture into the skillet, flattening them slightly with the back of the spoon to form pancakes.

              Fry the pancakes for about 4-5 minutes on each side or until they are golden brown and crispy.

                Remove the pancakes from the skillet and place them on a paper towel-lined plate to absorb excess oil.

                  Serve hot with a dollop of sour cream or a side of applesauce.
