400g ripe plums, pitted and halved

200g unsalted butter, softened

200g granulated sugar

4 large eggs

300g all-purpose flour

1 teaspoon baking powder

1 teaspoon vanilla extract

1 pinch of salt

50g ground almonds (optional, for added flavor)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the oven to 180°C (350°F). Grease and flour a 9x13-inch baking pan or line it with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

        In a separate bowl, whisk together the all-purpose flour, baking powder, ground almonds (if using), and salt.

          Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. Be careful not to overmix.

            Pour the batter into the prepared baking pan and spread it evenly.

              Arrange the halved plums cut-side up over the top of the batter, pressing them in slightly.

                Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted comes out clean and the top is golden brown.

                  Once baked, remove from the oven and let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                    If desired, dust the cooled cake with powdered sugar before serving.
