Ingredients

2 pounds baby potatoes

4 cloves garlic, minced

1/4 cup unsalted butter, melted

1 tablespoon Cajun seasoning

1/2 cup sour cream

Salt and pepper to taste

2 green onions, sliced (for garnish)

1/4 cup shredded cheddar cheese (optional)

Instructions

Boil the Potatoes: Begin by placing the baby potatoes in a large pot and covering them with cold water. Add a generous pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

Preheat the Oven: While the potatoes are boiling, preheat your oven to 400°F (200°C).

Prepare the Garlic Butter: In a small bowl, combine the melted butter with minced garlic and Cajun seasoning. Mix well to combine the flavors.

Drain and Smash: Once the potatoes are cooked, drain them and return them to the pot. Using a potato masher or fork, smash the potatoes gently – you want them to crack but not turn into a puree.

Mix in the Garlic Butter: Drizzle the garlic butter mixture over the smashed potatoes, adding the sour cream, salt, and pepper. Gently fold everything together until well incorporated.

Transfer to Baking Sheet: Line a baking sheet with parchment paper. Spoon the smashed potato mixture onto the sheet, creating little nests. Use the back of a spoon to flatten them slightly.

Add Cheese (optional): If desired, sprinkle shredded cheddar cheese over each smashed potato for an extra cheesy flavor.

Bake for Texture: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the tops are golden and crispy.

Garnish and Serve: Once done, take the potatoes out and let them cool for a moment. Garnish with sliced green onions before serving. Enjoy hot!
