1 lb sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

1 lb baby potatoes, halved

1 cup shredded sharp cheddar cheese

2 tablespoons olive oil

Fresh parsley, chopped for garnish

Prep the Potatoes: Preheat your oven to 425°F (220°C). Place the halved baby potatoes in a pot of salted water and bring to a boil. Cook for about 15-20 minutes until fork-tender, then drain and let them cool slightly.

    Smashed Potatoes: On a lined baking sheet, lay the baby potatoes and use a fork or the bottom of a glass to gently smash each potato until they’re about ½ inch thick. Drizzle with olive oil and sprinkle with salt and pepper.

      Add Cheddar: Bake the smashed potatoes in the preheated oven for 20-25 minutes, flipping halfway through, until they are crispy and golden. In the last 5 minutes, sprinkle shredded cheddar cheese on top of each potato and return to the oven until melted and bubbly.

        Cook the Steak Bites: While the potatoes are baking, heat 2 tablespoons of butter in a large skillet over medium-high heat. Season the steak bites with salt and pepper. Once the butter is melted and hot, add the steak pieces to the skillet in a single layer, making sure not to overcrowd the pan.

          Sauté the Steak: Cook the steak bites for about 2-3 minutes on each side, until browned. Add the minced garlic, rosemary, and thyme to the pan, then the remaining butter. Sauté for another minute, tossing the steak in the garlic butter sauce to coat evenly.

            Serve: Remove the steak bites from the heat and let them rest for a couple of minutes. Plate the crispy cheddar-smashed potatoes alongside the garlic butter steak bites, drizzling any remaining garlic butter sauce over the steak.

              Garnish: Finish with a sprinkle of freshly chopped parsley for color.
