1 lb (450g) sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and black pepper to taste

1 lb (450g) baby potatoes, halved

½ cup heavy cream

2 tablespoons fresh parsley, chopped

Instructions
 

Prepare the Potatoes: Begin by placing the halved baby potatoes in a large pot and covering them with water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until tender, about 15-20 minutes. Drain and set aside.

    Make the Herb Mash: In the same pot, add the cooked potatoes back in. Mash them with a potato masher or fork. Gradually mix in the heavy cream until you reach a smooth consistency. Stir in half of the chopped parsley, along with salt and pepper to taste. Keep warm.

      Sear the Steak Bites: In a large skillet over medium-high heat, add 2 tablespoons of butter. Once melted and sizzling, add the steak bites to the pan in a single layer. Season with salt and pepper. Sear for about 2-3 minutes on each side, or until they reach your desired level of doneness. Remove from the skillet and set aside.

        Prepare Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes or until the garlic is fragrant.

          Combine and Serve: Return the steak bites to the skillet and toss them in the garlic butter mixture until well coated. Cook for an additional minute to warm through.
