1 lb (450g) sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

4 garlic cloves, minced

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

1 lb (450g) Yukon Gold potatoes, peeled and cubed

½ cup heavy cream (or milk, for a lighter version)

½ cup sour cream

Chives or parsley, chopped, for garnish

Prepare the Potatoes: Place the cubed Yukon Gold potatoes in a large pot. Cover with cold water, season with salt, and bring to a boil. Cook for about 15-20 minutes or until fork-tender. Drain and set aside.

    Make the Creamy Mash: In the same pot, add the drained potatoes, heavy cream, and sour cream. Mash with a potato masher until smooth and creamy. Season with salt and pepper to taste. Keep warm while you cook the steak.

      Cook the Steak Bites: Heat olive oil in a large skillet over medium-high heat. Season the steak bites with salt and pepper. Once the oil is hot, add the steak bites in a single layer (you might need to do this in batches). Cook for 2-3 minutes on each side until nicely browned and cooked to your preferred doneness.
