4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 lb baby potatoes

½ cup shredded cheddar cheese

¼ cup sour cream

2 tablespoons green onions, sliced

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the baby potatoes and cook for about 15-20 minutes or until fork-tender. Drain and let them sit for a few minutes to cool slightly.

    Smash the Potatoes: Transfer the potatoes to a baking sheet lined with parchment paper. Using a potato masher or the bottom of a glass, gently smash each potato to about ½ inch thick.
