Ingredients

For the Steak Bites:

1 lb sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

Salt and pepper to taste

For the Cheesy Smashed Potatoes:

1.5 lbs baby Yukon Gold potatoes

4 tablespoons unsalted butter

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup green onions, chopped

Salt and pepper to taste

Instructions

Prepare the Potatoes:

    - Place the baby Yukon Gold potatoes in a large pot and cover with salted water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

      - Drain the potatoes and let them cool slightly before smashing them with the back of a fork or a potato masher.

        Make the Cheesy Smashed Potatoes:

          - In a large mixing bowl, combine the smashed potatoes, butter, shredded cheddar cheese, sour cream, chopped green onions, salt, and pepper.

            - Mix until everything is well combined and creamy. Set aside or keep warm.

              Cook the Steak Bites:

                - In a large skillet, melt the butter over medium-high heat. Once melted, add the minced garlic and chopped rosemary – sauté for about 30 seconds until fragrant.

                  - Increase the heat to high, then add the steak cubes, making sure not to overcrowd the pan. Season with salt and pepper.

                    - Cook for about 2-3 minutes per side, or until the steak bites are browned and cooked to your preferred doneness (medium-rare recommended).

                      Combine & Serve:

                        - Once the steak bites are cooked, remove from heat and drizzle the garlic butter from the pan over the steak.

                          - Serve the steak bites alongside generous portions of cheesy smashed potatoes.

                            - Prep Time, Total Time, Servings: 15 minutes | 40 minutes | 4 servings

Presentation Tips: Serve the steak bites on a rustic wooden platter for a hearty appeal, garnished with extra rosemary sprigs. Place the cheesy smashed potatoes in a bowl, topped with a sprinkle of cheddar cheese, and a few green onion slices for color. Enjoy!
