8 large shrimp, deveined and shelled

2 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon lemon juice

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Fresh parsley, chopped for garnish

Instructions
 

In a medium skillet over medium heat, melt 1 tablespoon of butter.

    Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

      Add the shrimp to the skillet, seasoning them with salt, pepper, and red pepper flakes (if using). Cook for about 2-3 minutes on each side until the shrimp are pink and opaque.

        Pour in the lemon juice and mix well. Remove from heat and set aside.

          Heat a griddle or another skillet over medium heat.

            Butter one side of each slice of sourdough bread with the remaining tablespoon of butter.

              Place one slice of bread, buttered side down, on the griddle. Layer half of the cheddar and mozzarella cheeses on top.

                Spread the garlic shrimp mixture evenly over the cheese layer.

                  Top the shrimp with remaining cheese and place the second slice of bread on top, buttered side up.

                    Cook for 3-4 minutes until the bottom slice is golden brown and the cheese begins to melt. Carefully flip the sandwich over and cook for another 3-4 minutes until golden and crispy on that side.

                      Once cooked, remove the sandwich from the skillet and let it sit for a minute before slicing.

                        - Presentation Tips: Cut the sandwich diagonally and serve on a rustic wooden board. Garnish with chopped parsley and serve with a side of marinara or garlic dipping sauce for extra flavor.
