1 pound Italian sausage (mild or spicy), cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup grated Parmesan cheese

8 ounces fettuccine or any pasta of your choice

1 cup cherry tomatoes, halved

1 cup fresh spinach

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
