4 salmon fillets (about 6 oz each)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and pepper to taste

1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

Juice and zest of 1 lemon

2 cups fresh spinach

Fresh parsley for garnish (optional)

Prepare the Salmon: Pat dry the salmon fillets with a paper towel and season both sides with salt, pepper, and smoked paprika. Set aside.

    Make the Garlic Butter: In a small saucepan, melt 2 tablespoons of butter over medium heat. Add the minced garlic and thyme. Sauté for about 1-2 minutes, until fragrant, but do not let it brown. Remove from heat and set aside.

      Cook the Salmon: In a large skillet over medium-high heat, add 1 tablespoon of the remaining butter. Once melted, place the salmon fillets skin-side down in the pan. Cook for about 4-5 minutes until the skin is crispy, then carefully flip the fillets and cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork. During the last minute of cooking, drizzle the garlic butter over the salmon.

        Prepare the White Beans: In the same skillet, once the salmon is removed, add the remaining tablespoon of butter. Stir in the drained white beans and sauté for about 3-4 minutes until warmed through. Add lemon juice, lemon zest, and fresh spinach, stirring until the spinach is wilted. Season with salt and pepper to taste.

          Serve: Plate the garlic butter salmon alongside a generous scoop of lemon white beans. Drizzle any remaining garlic butter from the skillet over the salmon for extra flavor. Garnish with chopped fresh parsley if desired.
