In a large skillet, melt 2 tablespoons of butter over medium heat. Add the diced potatoes, season with salt and pepper, and cook for about 10-12 minutes, stirring occasionally, until they start to become golden and tender.
Push the potatoes to one side of the skillet. In the empty space, add the remaining butter. Once melted, add the diced chicken and season with paprika, thyme, red pepper flakes, salt, and pepper. Cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Next, add the fresh spinach and toss everything together until the spinach has wilted.
Mix the potatoes and chicken mixture together until well incorporated. Adjust seasoning if needed.
Remove from heat and garnish with chopped parsley before serving.
