Ingredients

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh strawberries, hulled and diced

4 slices of thick-cut bread (like brioche or challah)

1/2 cup crushed graham crackers

1 large egg

1/4 cup milk

1 cup all-purpose flour

1 tsp cinnamon

1/2 cup sugar (for coating)

Oil for frying

Instructions

In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.

Gently fold in the diced strawberries until evenly distributed.

Take two slices of the thick-cut bread and spread a generous layer of the strawberry cheesecake mixture over one side of each slice.

Place the other two slices of bread on top to form sandwiches and press down gently to seal.

Set up a breading station: place the flour in one shallow dish, whisk together the egg and milk in another, and combine crushed graham crackers with cinnamon and sugar in a third.

Dip each sandwich first into the flour, coating both sides, then into the egg mixture, and finally coat with the graham cracker crumbs. Ensure the sandwiches are thoroughly covered.

Heat oil in a deep skillet over medium heat. Once the oil is hot (around 350°F), carefully place one or two sandwiches in the oil, taking care not to overcrowd the pan.

Fry each sandwich for 2-3 minutes per side, or until they are golden brown and crispy. Remove and drain on paper towels.

Allow the sandwiches to cool slightly before slicing them in half to reveal the creamy filling.

Optionally, dust with extra powdered sugar before serving.
