Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup fresh strawberries, hulled and chopped

1/2 cup heavy cream

1 large egg

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

Coarse sugar for sprinkling on top

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Whisk well to combine.

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

Gently fold in the chopped strawberries, being careful not to crush them.

In a separate bowl, whisk together the heavy cream, egg, vanilla extract, and almond extract (if using).

Pour the cream mixture into the dry ingredients. Stir gently until just combined, being cautious not to over-mix. The dough should be slightly sticky.

Turn the dough out onto a floured surface and shape it into a rectangle, about 1-inch thick. Cut into triangles or use a round cutter for a different shape.

Place the scones on the prepared baking sheet, spacing them apart. Sprinkle the tops with coarse sugar for added sweetness and crunch.

Bake in the preheated oven for 15-18 minutes, or until the scones are lightly golden on top.

Remove from the oven and let cool slightly on a wire rack before serving.

Prep Time: 15 minutes | Total Time: 33 minutes | Servings: 8 scones

                        - Presentation Tips: Serve the scones warm with a dollop of clotted cream or a simple whipped cream, and garnish with a few whole strawberries on the side for a beautiful contrast.
