2 slices of thick-cut brioche bread

1 large chicken breast, boneless and skinless

1 cup buttermilk

1 tsp hot sauce (optional)

1 cup all-purpose flour

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp salt

1/2 tsp black pepper

1 egg

1/2 cup milk

1 cup panko breadcrumbs

2 tablespoons butter

Maple syrup (for drizzling)

Leafy greens (arugula or spinach)

Marinate the Chicken: In a bowl, whisk together buttermilk and hot sauce. Submerge the chicken breast in the mixture and marinate for at least 1 hour (or overnight for best flavor) in the fridge.

    Prepare the Coating: In three separate shallow bowls, set out the flour mixed with paprika, garlic powder, onion powder, salt, and pepper in one; the beaten egg mixed with milk in another; and the panko breadcrumbs in the last.

      Bread the Chicken: Remove the chicken from the buttermilk marinade, allowing excess to drip off. First, coat it in the seasoned flour, then dip it in the egg mixture, and finally press it into the panko breadcrumbs until fully coated.

        Fry the Chicken: In a frying pan, heat oil over medium-high heat. Add the butter to the pan and once melted, carefully place the breaded chicken in. Fry for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove from the pan and let it rest on a paper towel-lined plate.

          Make the French Toast: In a separate bowl, whisk together eggs, milk, and a pinch of salt. In the same pan (wiped clean), add a pinch of butter and turn the heat to medium.
