Ingredients

4 slices of thick-cut brioche bread

2 large eggs

1/4 cup milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

2 boneless chicken breasts, pounded thin

1 cup all-purpose flour

1 teaspoon paprika

Salt and pepper to taste

1/2 cup buttermilk

Oil for frying (vegetable or canola)

Optional toppings: Maple syrup, sliced strawberries, whipped cream, or arugula

Instructions

Prepare the French Toast Batter: In a medium bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and nutmeg until well combined. Set aside.

Coat the Chicken: In a shallow dish, mix the flour, paprika, salt, and pepper. Dip each pounded chicken breast into the buttermilk and then dredge in the seasoned flour, ensuring an even coating.

Fry the Chicken: Heat about 1/4 inch of oil in a large skillet over medium heat. Once hot, carefully place the coated chicken breasts into the skillet and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove from skillet and let drain on a paper towel.

Prepare French Toast Bread: In a separate skillet or griddle, melt a small amount of butter over medium heat. Dip each slice of brioche bread into the egg mixture, allowing it to soak for a few seconds, and then place in the skillet. Cook until golden brown on each side, about 2-3 minutes.

Assemble the Sandwich: Take one slice of French toast, layer on a piece of fried chicken, and add a second slice of French toast on top. Repeat the process for the second sandwich.

Add Optional Toppings: Drizzle with maple syrup, add sliced strawberries, or fresh arugula for a touch of freshness.

Serve Immediately: Slice the sandwiches in half for easier handling and garnish with extra toppings if desired.
