1 lb flank steak, pounded flat

2 large onions, thinly sliced

2 tablespoons olive oil

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 cup shredded Gruyère cheese

1 tablespoon balsamic vinegar

Fresh parsley, chopped (for garnish)

Prepare the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sprinkle with sugar, salt, and pepper. Sauté for about 15-20 minutes, stirring occasionally, until the onions are soft and caramelized. Add thyme and balsamic vinegar, then cook for an additional 2 minutes. Remove from heat and let cool.

    Prepare the Steak: Lay the pounded flank steak flat on a clean cutting board. Season both sides with salt and black pepper.

      Assemble the Pinwheels: Spread the cooled caramelized onions evenly over the steak, leaving about a half-inch border. Sprinkle the shredded Gruyère cheese over the onions.

        Roll the Steak: Starting from one end, carefully roll the flank steak tightly into a log, securing the filled ingredients inside. Use kitchen twine to tie the roll at 2-inch intervals to keep it together. Alternatively, you can use toothpicks if you don’t have twine.

          Cook the Pinwheels: Preheat your grill or skillet to medium-high heat. Once hot, place the steak pinwheels on it and sear for about 4-5 minutes per side, depending on the desired doneness (medium-rare is around 135°F).

            Rest and Serve: Once cooked, remove the pinwheels from the grill and let them rest for 5 minutes. Carefully cut into 1-inch thick slices and arrange them on a serving platter.

              Garnish: Sprinkle fresh parsley over the top for added color and flavor.
