1 lb ground beef

1 lb ground pork

1 large onion, finely chopped

2 cloves garlic, minced

1 cup French onion soup (canned or homemade)

1 cup breadcrumbs

2 large eggs

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded Gruyère cheese

Fresh parsley, chopped (for garnishing)

Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.

    In a skillet over medium heat, sauté the chopped onion in a drizzle of olive oil until caramelized (about 10-15 minutes). Add minced garlic in the last minute of cooking and remove from heat. Allow to cool slightly.

      In a large mixing bowl, combine the ground beef and pork. Add the sautéed onion and garlic mixture.

        Pour in the French onion soup, breadcrumbs, eggs, Worcestershire sauce, thyme, salt, and black pepper. Mix until all ingredients are just combined; avoid overmixing.

          Transfer half of the meat mixture to the prepared loaf pan and create a small well in the center. Fill this well with half of the Gruyère cheese, then cover the cheese with the remaining meat mixture, sealing it well.

            Top the meatloaf with the remaining Gruyère cheese, spreading it evenly over the surface.

              Bake in the preheated oven for 60-75 minutes, or until the internal temperature reaches 160°F (70°C) and the top is golden and bubbly.

                Once cooked, let the meatloaf rest for 10 minutes before slicing. This helps to keep it juicy and cohesive.

                  Garnish each slice with freshly chopped parsley before serving.
