1 lb ground beef (80/20 blend)

1 large onion, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon black pepper

4 slices Gruyère cheese (or Swiss cheese)

4 brioche burger buns

Fresh thyme leaves (for garnish)

Optional: Dijon mustard or mayonnaise for spread

Caramelize the Onions: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions, sugar, salt, and pepper. Cook for about 20-25 minutes, stirring occasionally, until the onions become golden brown and caramelized. Remove from heat and set aside.

    Shape the Patties: While the onions caramelize, form the ground beef into four equal patties. Press a slight indentation in the center of each patty to help them cook evenly. Season both sides with salt and pepper.
