Instructions
Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter until well combined.
Mix in the baking soda and salt.
Add the sugar, beaten egg, and vanilla extract, stirring until incorporated.
Gradually add the flour to the banana mixture, gently folding it in until just combined. Be careful not to overmix! This is key to a light banana bread.
If using, fold in the chopped walnuts or chocolate chips.
Pour the batter into the prepared loaf pan and smooth the top.
Bake in the preheated oven for about 60-65 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove from oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For added flavor, you can sprinkle the top with oats or nuts before baking for a crunchy topping!
