Ingredients

For the Focaccia Dough:

2 cups all-purpose flour

1 cup warm water

1 packet (2 ¼ teaspoons) active dry yeast

1 teaspoon sugar

½ teaspoon salt

2 tablespoons olive oil (plus more for drizzling)

For the Topping:

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

1 cup sliced pepperoni

1 teaspoon Italian seasoning

Fresh basil leaves for garnish

Pinch of red pepper flakes (optional)

Instructions

Prepare the Focaccia Dough: In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mixing the Dough: In a large mixing bowl, combine flour and salt. Add the yeast mixture and 2 tablespoons of olive oil. Stir until the mixture comes together as a dough.

Kneading: Transfer the dough to a lightly floured surface and knead for about 6-8 minutes until smooth and elastic.

First Rise: Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Baking Dish: Preheat your oven to 425°F (220°C). Grease a 12x8-inch baking dish with olive oil.

Shape the Dough: Once the dough has risen, punch it down to release air. Transfer it to the baking dish and stretch it to fit the shape of the pan. Use your fingers to create dimples across the surface of the dough.

Second Rise: Let the dough rest for another 15-20 minutes to puff slightly.

Add the Toppings: Spread marinara sauce evenly over the dough. Sprinkle mozzarella cheese across the top, followed by an even layer of pepperoni. Sprinkle Italian seasoning over the toppings and drizzle a bit of olive oil for extra flavor.

Bake: Place the pizza in the preheated oven and bake for 20-25 minutes or until the cheese is bubbly and golden.

Finishing Touches: Once out of the oven, let it cool for a few minutes. Garnish with fresh basil leaves and a pinch of red pepper flakes if desired.

Slice and Serve: Cut into square slices while warm and enjoy your delicious Focaccia Pepperoni Pizza!
