2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/4 cup unsalted butter, chilled and cubed

1 cup buttermilk (or milk + 1 tablespoon lemon juice, rested for 5 minutes)

2 tablespoons honey (optional, for a touch of sweetness)

Additional flour for dusting

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the chilled cubed butter into the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

        Make a well in the center of the mixture and pour in the buttermilk (and honey, if using). Gently stir with a wooden spoon or spatula until just combined. Be careful not to overmix – the dough should be slightly lumpy.

          Turn the dough out onto a floured surface and use your hands to gently pat it into a 1-inch thick rectangle. Fold it in half, then pat it down again to about 1 inch thick. This folding creates the layers for fluffy biscuits!

            Using a biscuit cutter or a glass, cut out large rounds (about 3 inches in diameter) and place them onto the prepared baking sheet. Press together any scraps and repeat until all dough is used.

              Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and have risen majestically.

                Once baked, remove from the oven and allow to cool slightly on the baking sheet. Serve warm with butter or your favorite spread.
