2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, chilled

1 tablespoon honey (optional)

1 teaspoon vanilla extract (optional)

Instructions
 

Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cubed cold butter into the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

        Pour the buttermilk into the flour mixture. If using, add honey and vanilla extract. Stir until just combined; do not overmix. The dough should be slightly sticky.

          Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat it out to about 1-inch thick.

            Use a round biscuit cutter (or a glass) to cut out biscuits, being sure to press straight down without twisting for the fluffiest texture. Re-roll the scraps as needed to cut out more biscuits.

              Place the biscuits on the prepared baking sheet so they are touching each other.

                Bake for 12-15 minutes or until golden brown on top.

                  Remove from the oven and brush with melted butter, if desired. Let cool slightly before serving.
