Ingredients

1.5 lbs flank steak, trimmed

Salt and pepper to taste

1 cup fresh spinach leaves

½ cup roasted red peppers, chopped

½ cup feta cheese, crumbled

¼ cup sun-dried tomatoes, chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Flank Steak: Place the flank steak between two sheets of plastic wrap. Using a meat mallet, gently pound the steak to about ½ inch thickness for even cooking. Remove the plastic wrap and season both sides generously with salt and pepper.

Make the Filling: In a medium bowl, combine the spinach, roasted red peppers, feta cheese, sun-dried tomatoes, minced garlic, olive oil, oregano, crushed red pepper flakes (if using), and a pinch of salt and pepper. Mix well until everything is evenly combined.

Assemble the Roulade: Lay the flank steak flat on a clean surface. Spread the filling mixture evenly over the steak, leaving about 1-inch borders on all sides.

Roll the Steak: Starting from one end, carefully roll the steak tightly into a log. Secure the roulade with kitchen twine or toothpicks to hold its shape during cooking.

Cook the Roulade: Preheat your oven to 375°F (190°C). Heat a large oven-safe skillet over medium-high heat. Sear the roulade on all sides until browned (about 2-3 minutes per side).

Roast in Oven: Transfer the skillet to the oven and roast the roulade for 20-25 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.

Rest and Slice: Remove from the oven and let the roulade rest for 10 minutes before carefully slicing it into thick rounds.

Serve: Arrange the slices on a serving platter, garnish with chopped parsley, and drizzle any remaining juices from the pan over the top.

                  - Prep Time: 20 minutes | Total Time: 50 minutes | Servings: 4-6

Presentation Tips: Serve the roulade slices on a rustic wooden board or decorative platter, alongside a fresh salad or roasted vegetables to enhance the presentation. Add a few sprigs of parsley and arrange slices slightly overlapping for an appealing look.
