Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons garlic powder

1 teaspoon smoked paprika

Zest of 1 lemon

Zest of 1 orange

2 tablespoons freshly squeezed lemon juice

2 tablespoons freshly squeezed orange juice

1 tablespoon honey

1 tablespoon Dijon mustard

1 teaspoon dried thyme

Salt and pepper to taste

Fresh herbs (like parsley and basil) for garnish

Instructions

Prepare the Marinade: In a medium bowl, whisk together olive oil, garlic powder, smoked paprika, lemon zest, orange zest, lemon juice, orange juice, honey, Dijon mustard, dried thyme, salt, and pepper until well combined.

Marinate the Chicken: Place the chicken breasts in a large zip-top bag or shallow dish and pour the marinade over them. Ensure the chicken is fully coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2 hours for maximum flavor.

Preheat the Grill or Oven: If using a grill, preheat it to medium-high heat. If using an oven, preheat it to 400°F (200°C).

Cook the Chicken: For grilling, place the marinated chicken breasts on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). For baking, place the chicken on a lined baking sheet and cook for 20-25 minutes, until cooked through.

Rest and Serve: Once done, remove the chicken from the heat and let it rest for 5 minutes before slicing.

Garnish and Enjoy: Serve the chicken on a plate and drizzle any remaining marinade over the top. Garnish with freshly chopped herbs for added flavor and a burst of color.
