Ingredients
  

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup ricotta cheese

1/2 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1/4 cup cheddar cheese, shredded

1/4 cup goat cheese, crumbled

Fresh basil leaves for garnish (optional)

Instructions
 

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for 1 more minute, careful not to let it burn.

      Add the crushed tomatoes, oregano, basil, red pepper flakes (if using), and season with salt and pepper. Stir well to combine.

        Bring the sauce to a simmer, then reduce the heat to low. Let it cook uncovered for 20–25 minutes, stirring occasionally. This allows the flavors to meld together.

          Once the sauce has thickened to your liking, remove it from the heat.

            Stir in the ricotta cheese until fully combined, creating a creamy base.

              Add the mozzarella, Parmesan, cheddar, and goat cheese to the sauce. Stir until all the cheeses are melted and well incorporated.

                Taste and adjust the seasoning if necessary. If you prefer a smoother texture, you can blend the sauce slightly using an immersion blender.

                  Serve immediately over your favorite pasta, spooning additional cheese on top if desired.
