1 loaf of crusty French bread, cubed

8 large eggs

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup crumbled breakfast sausage

1 cup diced bell peppers (red and green)

1 cup diced onions

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

¼ cup fresh parsley, chopped for garnish

For the Country Gravy:

¼ cup unsalted butter

¼ cup all-purpose flour

2 cups whole milk

1 teaspoon onion powder

½ teaspoon garlic powder

Salt and pepper to taste

Prepare the Casserole: In a large mixing bowl, whisk together the eggs, whole milk, salt, black pepper, garlic powder, and smoked paprika until well combined.

    Assemble the Casserole: Grease a 9x13-inch baking dish. Layer half of the cubed French bread in the bottom of the dish. Evenly sprinkle half of the crumbled sausage, diced bell peppers, and onions over the bread. Pour half of the egg mixture on top. Repeat with the remaining bread, sausage, bell peppers, onions, and finish with the remaining egg mixture.

      Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

        Cover and Refrigerate: Cover the dish with plastic wrap and refrigerate overnight, allowing the bread to soak up the egg mixture.

          Bake the Casserole: The next morning, preheat the oven to 350°F (175°C). Remove the plastic wrap and bake the casserole uncovered for 45-50 minutes or until the top is golden brown and the center is set.

            Prepare the Country Gravy: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 2 minutes until lightly golden. Gradually add the milk while whisking continuously to avoid lumps. Cook until the gravy thickens, about 5-7 minutes. Stir in the onion powder, garlic powder, and season with salt and pepper to taste.

              Serve: Cut the casserole into squares and serve warm, drizzled with the homemade country gravy. Garnish with chopped parsley for an added fresh touch.
