2 packs of fresh ramen noodles

1 tablespoon sesame oil

2 soft-boiled eggs (optional)

1 cup spinach or bok choy

Instructions
 

Heat the sesame oil in a large pot over medium heat. Add minced garlic and grated ginger, sautéing for about 1-2 minutes until fragrant.

    Add the chicken thighs to the pot, browning them on both sides for about 4 minutes.

      Pour in the chicken broth, soy sauce, sriracha, and chili paste. Bring to a simmer, cover, and let cook for 15-20 minutes until the chicken is fully cooked through.

        Remove the chicken from the pot and let it rest on a cutting board. Shred it using two forks.

          While the chicken is resting, add the ramen noodles to the broth and cook according to package instructions (usually around 3-4 minutes).

            In the last minute of cooking, stir in the spinach or bok choy to wilt it in the broth.

              Serve the ramen in bowls: add the noodles and broth first, then top with shredded chicken, a soft-boiled egg (if using), and chopped green onions.
