4 large eggs

2 English muffins, split in half

4 slices of Canadian bacon (or prosciutto for a unique twist)

1 tablespoon white vinegar

1/2 cup unsalted butter

2 large egg yolks

1 tablespoon Dijon mustard

1 teaspoon fresh lemon juice

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Begin by poaching the eggs. In a wide pot, bring water to a gentle simmer and add the white vinegar. This helps the eggs hold their shape.

    Crack each egg into a small cup or ramekin, then gently slide them one at a time into the simmering water. Poach for about 3-4 minutes for runny yolks, or longer if desired. Remove eggs with a slotted spoon and place them on a paper towel to drain excess water.

      In a small saucepan, melt the butter over low heat, letting it cool slightly without browning.

        In a separate bowl, whisk together the egg yolks, Dijon mustard, and lemon juice until smooth. Place this bowl over a pot of simmering water (double boiler method) and gradually whisk in the melted butter, keeping it emulsified. Cook for 2-3 minutes until slightly thickened, and season with salt and pepper to taste.

          While preparing the sauce, toast the English muffin halves until golden brown. In a skillet, lightly brown the Canadian bacon or prosciutto until heated through.

            To assemble, place one slice of bacon on each toasted English muffin half. Top with the poached egg and drizzle with the hollandaise sauce.
