Ingredients

1 pre-made pie crust (store-bought or homemade)

2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 tablespoon fresh basil leaves, finely chopped

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for sprinkling)

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a mixing bowl, combine the sliced strawberries, granulated sugar, cornstarch, lemon juice, and chopped basil. Toss gently until the strawberries are coated. Let it sit for about 10 minutes to allow the flavors to meld.

Roll out the pie crust on a lightly floured surface into a rough 12-inch circle. Transfer the dough to the prepared baking sheet.

Spoon the strawberry mixture into the center of the dough, leaving about 2 inches of border around the edge.

Gently fold the edges of the dough over the filling, pleating as you go to create a galette shape.

Brush the edge of the crust with the beaten egg to give it a lovely golden color when baked.

Sprinkle the coarse sugar over the crust for added crunch and sweetness.

Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the strawberries are bubbly.

Remove from the oven and let it cool slightly before slicing.
