1 lb fresh shrimp, peeled and deveined

1 cup freshly squeezed lime juice (about 6-8 limes)

1/2 cup freshly squeezed orange juice (about 2 oranges)

1 small red onion, finely chopped

1 medium cucumber, diced

1 ripe avocado, diced

1-2 jalapeños, finely chopped (to taste)

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Begin by preparing the shrimp. In a medium bowl, combine the peeled and deveined shrimp with lime juice. Make sure the shrimp are fully submerged in the juice as this will cook them through acidity.

    Cover the bowl with plastic wrap and refrigerate for 30 minutes or until the shrimp turn opaque and pink.

      Once the shrimp are cooked, drain about half of the lime juice from the bowl.

        Add the orange juice, chopped red onion, diced cucumber, jalapeños, and cherry tomatoes to the shrimp mixture. Stir gently to combine.

          Carefully fold in the diced avocado and chopped cilantro, being cautious not to mash the avocado.

            Season the ceviche with salt and pepper to taste, and adjust lime or orange juice as needed for flavor.

              Let the ceviche sit for an additional 10 minutes to allow flavors to meld together, then serve chilled.
