6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled

1 medium onion, diced

1 bell pepper (any color), diced

1 cup frozen hash browns, thawed

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, sauté the diced onion and bell pepper over medium heat until they are softened, about 5-7 minutes.

      In a large mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until well combined.

        Grease a 9x13 inch casserole dish with cooking spray or butter.

          Spread the thawed hash browns evenly across the bottom of the prepared casserole dish.

            Sprinkle the crumbled breakfast sausage, sautéed onion, and bell pepper mixture over the hash browns.

              Pour the egg mixture over the top of the sausage and veggies, making sure everything is evenly soaked.

                Sprinkle the shredded cheddar cheese on top of the casserole.

                  Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the center and the top is golden brown.

                    Let the casserole cool for a few minutes before slicing. Garnish with chopped chives or parsley before serving.
