12 oz rotini pasta

1 cup fresh spinach, roughly chopped

1/2 cup sun-dried tomatoes in oil, drained and sliced

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Stir in the sun-dried tomatoes and cook for another 2 minutes to soften.

        Pour the heavy cream into the skillet and bring the mixture to a gentle simmer. Reduce the heat to low and whisk in the grated Parmesan cheese until melted and the sauce is smooth.

          Add the chopped spinach to the sauce and cook for another 1-2 minutes until wilted. Season with salt and pepper to taste.

            Toss the cooked rotini pasta in the creamy sauce until well coated.

              Serve immediately, garnished with fresh basil leaves if desired.
