Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon baking powder

½ teaspoon baking soda

1/4 teaspoon salt

1/2 cup buttermilk

Zest of 1 lemon

2 tablespoons fresh lemon juice

For the glaze: 1 cup powdered sugar, 2 tablespoons lemon juice, 1 teaspoon lemon zest

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Add the eggs, one at a time, mixing well after each addition.

Stir in the lemon zest and fresh lemon juice until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture, mixing just until combined.

Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Once baked, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

For the glaze, combine powdered sugar, lemon juice, and lemon zest in a bowl until smooth. Drizzle the glaze over the cooled cake.
