1 lb ground beef

1 cup uncooked white rice

2 cups beef broth

1 can (15 oz) diced tomatoes (with juice)

1 cup frozen peas and carrots

1 onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup shredded cheddar cheese

Salt and pepper to taste

Optional: chopped fresh parsley for garnish

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up as it cooks. Drain any excess fat.

      Add the diced onion and garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.

        Stir in the uncooked rice, beef broth, diced tomatoes (with their juice), and Italian seasoning. Season with salt and pepper to taste.

          Bring the mixture to a gentle boil, then reduce the heat and cover the skillet. Simmer for about 15 minutes, or until the rice absorbs most of the liquid.

            Stir in the frozen peas and carrots until evenly distributed.

              Transfer the mixture to a greased 9x13 inch casserole dish, spreading it evenly across the surface.

                Top with the shredded cheddar cheese, covering the entire dish.

                  Bake in the oven for 20-25 minutes, or until the cheese is bubbly and golden brown.

                    Remove from the oven and let it cool for about 5 minutes before serving. Garnish with chopped fresh parsley if desired.
